Ingredients

1/2 cup oil
1 lb lamb or 1 lb beef
1 large onion , chopped
1 lb carrot , julienned
salt ( as you prefer )
2 1/4 cups water
2 cups rice
1 bulb of garlic
1 red hot pepper
1/2 teaspoon cumin
1/2 cup raisins
Uyghur Polo (Pilaf) is a popular dish in the Uyghur cuisine of Central Asia. Instructions

1.Heat the oil in a large pot over medium heat and add the meat. Fry the meat until browned on all sides, then remove it from the pot.
2.Add the chopped onion to the pot and cook until it becomes translucent.
3.Add the julienned carrot and cook for 5-7 minutes until the carrots soften.
4.Season with salt.
5.Add the water and the rice to the pot. Bring to a boil then reduce the heat to low and let it simmer until the rice is cooked through.
6.In a separate pan, fry the garlic and the red hot pepper in oil for a few minutes.
7.In the same pan, toast the cumin seeds for 1-2 minutes, then add them to the pot with the rice along with the raisins and mix well.
