Uszka do Barszczu, or mushroom dumplings for borscht, is a traditional Polish dish commonly served during Christmas Eve dinner. It is said that the dumplings are meant to resemble ears, hence the name 'uszka' which means 'little ears' in Polish. The dish is usually served as a side dish or added to borscht soup to make it a more filling meal. The dumplings are typically small and filled with a savory mixture of mushrooms, onion, and spices. This recipe is a simplified version of the original, using dried wild mushrooms that can be easily found in most grocery stores.

Instructions

.In a small saucepan, rehydrate the dried wild mushrooms in hot water for about 30 minutes.
.Remove from heat and drain the mushrooms, squeezing out any excess water.
.Finely chop the mushrooms and set aside.
.In a large skillet, heat the butter over medium heat, then add chopped onions and sauté until translucent for about 5-7 minutes.
.Add the mushrooms and sauté for an additional 2-3 minutes.
.Season the mushroom mixture with salt and ground black pepper.
.In a mixing bowl, combine flour, hot milk, and egg yolk to form the dough.
.Knead the dough for several minutes until it becomes elastic and smooth.
.Divide the dough into four parts and roll each one out thinly.
.Use a cup or a cookie cutter to cut about 2-inch circles.
.Place a small spoonful of the mushroom filling in the center of each dough circle.
.Fold the dough in half and pinch the edges together to seal the dumpling.
.In a large pot of boiling salted water, cook the dumplings for about 5-6 minutes or until they float to the surface.
.Serve hot with borscht soup.
