Ingredients

125 g butter
2/3 cup brown sugar , firmly packed
2 eggs
1/2 cup light sour cream
1 1/4 cups self-raising flour
1/2 teaspoon baking powder
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
3 pears ( such as Williams , Packham or Beurre Bosc )
clotted cream , to serve
2/3 cup sugar
1/4 cup water
1/4 cup boiling water
This Upside-Down Toffee Pear Cake is the perfect dessert for any occasion, from a family dinner to a special occasion with friends. Instructions

1.Preheat the oven to 180°C.
2.Melt the butter in a 22cm (base measurement) ovenproof frying pan. Add the brown sugar and stir until well combined.
3.Make the cake batter by whisking together eggs and sour cream in a large bowl. Add flour, baking powder, ginger and cinnamon. Stir to combine.
4.Peel and core the pears. Cut them into thin slices and arrange them in the frying pan in which the butter and sugar mixture is melted. Pour the cake batter over the pear slices.
5.Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the cake comes out clean.
6.In the meantime, make the toffee sauce. Mix sugar and water in a saucepan. Stir and bring to boil for 4-5 minutes until sugar is dissolved and the mixture is turned golden in colour. Take off the heat and carefully stir in boiling water. The caramel may spit so be careful.
7.Serve the dessert hot or cold with toffee sauce and clotted cream.
