Ingredients

1 lb eggplant , cut into bite size pieces
3 teaspoons coriander seeds
1 1/2 teaspoons channa dal ( aka bengal gram )
1 1/2 teaspoons black gram dal ( aka urad dal )
3 dried red chilies ( the long thin kind )
1/8 teaspoon asafoetida powder
2 teaspoons vegetable oil
1/4 cup unsweetened coconut , grated ( optional )
1 teaspoon salt
vegetable oil
1/2 teaspoon tamarind paste
1/4 teaspoon mustard seeds
water
Unstuffed stuffed curried eggplant is a flavorful and aromatic dish that hails from South India. It is a vegetarian dish that is bursting with bold spices and flavors. The dish is made with bite-sized pieces of eggplant that are roasted until golden brown, and then cooked in a spice-laden gravy made with coriander seeds, dried red chilies, tamarind, and coconut. Instructions

1.Dry roast coriander seeds, channa dal, black gram dal, dried red chilies, and asafoetida powder in a pan until fragrant. Cool and grind into a coarse powder.
2.Heat vegetable oil in a pan and sauté eggplant until golden brown. Set aside.
3.In the same pan, add more oil and fry grated coconut until golden brown. Set aside.
4.In another pan, add more oil and add mustard seeds. When they start to splutter, add tamarind paste, salt, and the ground spice powder.
5.Add the sautéed eggplant, fried coconut, and enough water to make a thick gravy. Cook until the eggplant is soft.
6.Serve hot with steamed rice or coconut milk rice.
