500 g boneless chicken , cleaned , washed and cut into 1 inch sized cubes
1 cup dried apricot
2 medium red capsicums ( bell peppers )
7 -8 almonds
4 tablespoons butter
salt
1/2 cup brown sugar
7 -8 peppercorns

Instructions

1.Blend the dried apricots in a blender or food processor to make a puree. Keep it aside
2.Cook the almonds until lightly toasted and blend them in a food processor to make almond meal
3.Melt 1 tablespoon of the butter in a skillet and saute the chopped bell peppers for about 3-4 minutes. Remove from heat and set aside
4.In the same skillet, add the remaining butter and let it melt
5.Add the cubed chicken to the skillet and cook for 10-12 minutes or until no longer pink in the center
6.Add salt, brown sugar, and peppercorns to the skillet and mix well
7.Add the pureed apricot and toasted almond meal to the skillet. Cook for 2-3 minutes or until the chicken is coated with the sauce
