1/4 cup red lentil
4 tablespoons extra virgin olive oil
1 large onion , chopped small
4 garlic cloves , chopped
8 cups water
2 teaspoons Madras curry powder
1 teaspoon turmeric
1 teaspoon ground cumin
1/2 teaspoon hot red pepper flakes
1 teaspoon salt
2 large carrots , peeled and chopped

Instructions

1.In a large pot, add 10 cups of water, ham bone, bay leaves, peppercorns, cloves, cinnamon sticks, chopped celery, split peas, yellow split peas, and red lentil wrapped in cheesecloth.
2.Bring to a boil, and then let it simmer on low heat for 2-3 hours until the peas and lentils are soft.
3.In a separate pan, heat the olive oil, add the chopped onion and garlic, and sauté until softened.
4.Add the sautéed onion and garlic to the pot with 8 cups of water, curry powder, turmeric, cumin, red pepper flakes, and salt.
5.Stir to combine and let it simmer on low heat for another hour.
6.Add the chopped carrots and continue to simmer for another 30 minutes until the carrots are tender.
7.Remove the ham bone, bay leaves, peppercorns, cloves, cinnamon sticks, and cheesecloth with the lentils.
