Ingredients

1 lb 80 % ground beef
1 medium yellow onion , diced
1 bunch green onion ( divided )
1/3 cup green bell pepper
2 poblano chiles , peppers ( pasilla , divided )
1/2 cup diced black olives
1 jalapeno , seeded finely diced
1/2 cup crushed spicy nacho Doritos
1 slice white bread ( finely diced )
2 tablespoons taco sauce ( I use Taco Bell mild sauce )
1 whole egg plus 1 egg white
1/4 cup half-and-half
16 ounces Velveeta cheese
10 oz.can Rotel tomatoes & chilies
4 tablespoons salsa
1 teaspoon vegetable oil
1 ounce taco seasoning ( I use Old El Paso )
This Unbeatable Taco Meatloaf is a unique twist on the classic American dish. The warmth of the taco seasoning mixed with the cheesiness of the Velveeta cheese is an unbeatable combination. Instructions

1.Preheat your oven to 350 degrees F.
2.In a large mixing bowl, combine ground beef, diced onion, half of the chopped green onion, diced green pepper, half of the poblano peppers, black olives, jalapeno, crushed Doritos, bread, taco sauce, egg, and half-and-half.
3.Using your hands, mix the ingredients together until well combined.
4.Transfer the mixture to a 9x5 inch loaf pan.
5.Bake for 45 minutes.
6.While the meatloaf is baking, make the cheese sauce. In a medium saucepan, combine Velveeta cheese, Rotel tomatoes and chilies, salsa, and vegetable oil. Cook over medium heat until the cheese is melted and the sauce is smooth.
7.After 45 minutes of baking, remove the meatloaf from the oven and pour the cheese sauce over the top.
8.Return the meatloaf to the oven and bake for an additional 15 minutes, or until the cheese is bubbly and the meatloaf is cooked through.
9.Remove from the oven and top with the remaining chopped green onion and poblano peppers.
10.Serve hot and enjoy!
