175 g coconut biscuits ( or other sweet biscuit )
75 g butter ( melted )
3/4 cup sugar
1/4 teaspoon salt
1 1/2 tablespoons gelatin
1 cup milk
2 egg yolks ( beaten )
2 egg whites
1 tablespoon instant coffee
500 g cream cheese
1 teaspoon vanilla
1/4 cup sugar ( extra )
1/2 cup heavy cream ( softly whipped )
1/2 cup heavy cream ( whipped for decoration )
grated chocolate , for decoration

Instructions

1.Crush the biscuits in a food processor or a zip-lock bag with a rolling pin.
2.Mix the crushed biscuits, melted butter, and 1/4 cup of sugar together.
3.Press the biscuit mixture into the base of a 23cm springform pan and refrigerate for 30 minutes.
4.Sprinkle the gelatin over the milk and stir until dissolved.
5.In a pan, whisk together the beaten egg yolks, 1/2 cup of sugar, salt, and instant coffee.
6.Add the gelatin mixture and cook over low heat, stirring constantly until the mixture thickens.
7.Beat the cream cheese and vanilla in a large bowl until smooth.
8.Stir in the gelatin mixture and fold in the softly whipped heavy cream.
9.Beat the egg whites until stiff peaks form and fold them in.
10.Pour the mixture onto the biscuit base and refrigerate for at least 3 hours or overnight.
11.Whip the remaining heavy cream and decorate the cheesecake with the whipped cream and grated chocolate.
