Ingredients

500 ml samp
250 ml speckled sugar beans
1 teaspoon salt
1 teaspoon pepper
12 1/2 ml oil
2 onions , sliced
1 green pepper , sliced
4 fresh garlic cloves , crushed
12 pieces mutton neck or 12 pieces lamb
2 tomatoes , skinned and chopped
6 small potatoes , peeled
100 g carrots
15 ml curry powder
25 ml turmeric
1 chicken stock cube , dissolved in
500 ml boiling water
Umqusho is a traditional South African dish that consists of samp and beans cooked with vegetables and spices. Instructions

1.Wash the samp and sugar beans in cold running water, and then soak them, covered with cold water, overnight.
2.Drain the samp and beans and place them in a pot and add water to cover by about 5 cm.
3.Add salt and pepper and bring to the boil.
4.Heat the oil in a frying pan and fry the onions, green pepper, and garlic for 5 minutes.
5.Add the meat to the frying pan and brown it in the onion mixture.
6.Add the onion mixture to the samp and beans and let it simmer for an hour or until the samp and beans are cooked.
7.Add the tomatoes, potatoes, carrots, curry powder, turmeric, and stock to the pot and let it simmer for 45 minutes.
