4 cups very hot water

3/4 cup firm tofu , cubed
1/4 cup fresh basil leaves
2 tablespoons vegetable oil
3/4 cup chicken , cut into cubes
1/2 cup small black tiger shrimp , peeled and deveined
1 1/2 teaspoons paprika
2 eggs , beaten
7 tablespoons vegetable oil
3 cloves garlic , minced
1/2 cup white vinegar
1/2 cup fish sauce
1 tablespoon brown sugar
2 teaspoons ketchup
2 teaspoons tamarind paste
2 lemon grass stalks , minced
1/2 cup water , if needed ( optional )
3 tablespoons chopped roasted peanuts ( optional )
1 cup bean sprouts
1 lime , cut in wedges
4 green onions , thinly sliced

Instructions

11.Add the white vinegar, fish sauce, brown sugar, ketchup, tamarind paste, and minced lemongrass. Mix everything well.
12.If the noodles seem too dry, add some water.
13.Add the roasted peanuts and bean sprouts.
14.Turn off the heat and add the fresh basil.
15.Serve with lime wedges and thinly sliced green onions.
