Ingredients

2 kg potatoes
3 large onions
1 kg lamb ( Neck , shoulder or chops can all be used )
chopped fresh parsley ( to garnish )
lamb bones or beef bone
2 large carrots
2 stalks celery
1 large onion
1 garlic clove
2 bay leaves
salt & pepper
rosemary
4 pints water
The Lancashire Hot Pot is a classic English dish that originated in the north-west of England in the 18th century. Made with lamb and potatoes, it was a hearty and filling meal for workers in the area. This version of the hot pot uses neck, shoulder, or chops of lamb, layered with thinly sliced vegetables and cooked in a casserole dish for several hours. The result is a delicious and comforting stew, with a crispy potato topping. Traditionally, hot pots were served with pickled red cabbage or beetroot.

Instructions

1.Preheat the oven to 160 C.
2.Peel and thinly slice the potatoes, onions, and carrots.
3.In a large casserole dish, layer half of the sliced potatoes.
4.Add a layer of sliced onions and then a layer of sliced carrots.
5.Season with salt and pepper.
6.Add the lamb to the casserole dish on top of the vegetables.
7.Layer the remaining potatoes, onions, and carrots on top of the lamb.
8.Season with salt and pepper and add the rosemary and chopped garlic.
9.Pour water into the dish until it reaches the top layer of vegetables.
10.Add the bay leaves and lamb or beef bones.
11.Cover the dish with a lid and bake in the oven for 2 and a half to 3 hours or until the lamb is tender.
12.Remove the lid and increase oven temperature to 200 C.
13.Cook for an additional 30 minutes or until the potatoes on top are golden brown and crispy.
