3 lbs lamb shoulder , cut in 1 1/2-inch cubes

2 medium yellow onions , roughly chopped
5 garlic cloves , peeled
2 tablespoons minced fresh ginger
5 large fresh tomatoes , cored and cut in large chunks
2 cups water
1/2 cup unsweetened plain yogurt

Instructions

1.In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat.
2.Once the oil is hot, add the coriander seeds, green cardamom pods, fennel seeds, cumin seeds, and cloves to the pot. Stir well and let cook for 1-2 minutes, or until fragrant.
3.Add the ground turmeric, cinnamon sticks, bay leaves, Thai bird chili pepper, and curry leaves to the pot and stir well.
4.Add the lamb shoulder to the pot and season generously with kosher salt and freshly ground black pepper. Stir well to coat the lamb in the spices.
5.Add the roughly chopped onions, peeled garlic cloves, and minced fresh ginger to the pot. Stir well to combine and let cook for 5-7 minutes, or until the onions have softened and become translucent.
6.Add the large chunks of fresh tomato to the pot and stir well. Let the mixture cook for 10-15 minutes, or until the tomato has started to break down and form a thick sauce.
