1 whole chicken
2 cans red enchilada sauce
1 jar dill pickle slices
2 cans medium pitted black olives
1 package small white corn tortillas
4 packages of shredded cheddar cheese

Instructions

1.Preheat the oven to 375 F (190 C).
2.Cook the whole chicken for 20-25 minutes and let it cool. Once it's cooled, shred the chicken.
3.Pour one can of enchilada sauce on the bottom of a 9x13 baking dish.
4.In a small pan, heat up the other can of enchilada sauce until it boils.

6.Roll up each tortilla and place them seam side down in the baking dish, making two rows.

8.Bake for 25-30 minutes.
