8 cups water ( more if needed )
2 turnips , diced
2 carrots , diced
1/3 cup tomato juice
3/4 cup beer ( kvass )
2 cups red cabbage , shredded
3 beets , peeled
2 tablespoons red wine vinegar
1 cup flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
1 teaspoon caraway seed
1/2 cup milk
1 egg , beaten
fresh ground black pepper

fresh dill
Ukrainian Borscht is a traditional staple in Eastern Europe, and each family has its own unique spin on the recipe. Instructions

1.Season beef short ribs with kosher salt.
2.In a large pot, heat olive oil over medium-high heat and sear the beef until browned on all sides.
3.Add onion, garlic, black peppercorns, and bay leaves, and sauté for 5 minutes.
4.Pour in water, turnips, carrots, tomato juice, and beer, and bring to a boil.
5.Reduce heat to low, cover, and simmer for 2 hours or until the beef is tender.
6.Remove the beef from the pot, shred into small pieces, and set aside.
7.Add red cabbage and beets to the pot, and simmer for another 30 minutes or until vegetables are tender.
8.In a mixing bowl, whisk together flour, baking powder, kosher salt, and caraway seeds.
9.Stir in milk, beaten egg, and shredded beef until a thick batter forms.
10.Drop spoonfuls of batter into the simmering soup and cook for 15 minutes or until dumplings are cooked through.
11.Season with fresh ground black pepper and serve hot with a dollop of sour cream and fresh dill.
