Ingredients

2 cups flour
1/2 cup milk , warm
1/2 cup potato , well mashed
1 teaspoon salt
1 tablespoon vegetable oil
1/2 cup chopped onion
1/4 cup butter
2 -3 cooked potatoes , mashed
1 cup grated cheddar cheese
2 -3 cups cottage cheese , drained ( or use dry curd )
1/3 cup fresh dill , chopped
1 egg
salt and pepper ( taste before adding egg ! )

Instructions

1.In a large mixing bowl, combine flour, warm milk, mashed potato, salt, and vegetable oil.
2.Once the dough comes together, knead it until it is smooth and elastic.

4.Add cooked mashed potatoes, grated cheddar cheese, and drained cottage cheese into a large mixing bowl.

6.Once the filling is ready, roll out the dough to a 1/8 inch thickness and cut circles with a cookie cutter.
7.Add a spoonful of the filling to the center of each circle.
8.Fold the circles in half and seal the edges with a fork.
9.Boil the perogies in salted water until they float to the surface, then transfer them to a bowl using a slotted spoon.
10.Serve hot in a bowl of sour cream, sautéed onions, and chopped dill.
