DOUGH :
5 cups all-purpose flour
1 teaspoon salt
2 tablespoons butter , softened
1 cup evaporated milk
1/2 cup water
FILLING :
6 medium potatoes , cut into small cubes
2 large onions , finely chopped
1/2 cup butter
1 cup shredded Cheddar cheese
salt and pepper to taste
ALTERNATE FILLING :
1 pound sauerkraut
2 large onions , finely chopped
1/2 cup butter
3 cups finely shredded green cabbage
1 cube chicken bouillon
2 teaspoons pepper

Instructions

1.In a large bowl, combine the flour and salt together.
2.Add the butter and mix until crumbly.

4.Cover the dough with plastic wrap and let it rest for 30 minutes.
5.In a separate pot, boil the potatoes until they are tender.

8.Roll out the dough on a floured surface until it is thin. Cut circles of about 3 inches using a glass or a cookie cutter.
9.Place a tablespoon of filling on half of each circle, keeping a small space between the filling and the edge.
10.Fold over the other half to form a half-moon shape. Press the edges together to seal.
11.Repeat until all the dough and filling is used.
12.Bring water to a boil in a large pot. Add the varenyky and cook for about 5 minutes, until they rise and float to the surface.
13.Remove with a slotted spoon and place on a serving dish. Serve with sour cream or melted butter, topped with fried onions.
