1 cup cold mashed potatoes
1 egg , beaten
1 teaspoon grated onion

3/4 cup all-purpose flour
2 teaspoons baking powder
2 cups dry cottage cheese

Halushky is as iconic as a Ukrainian dish can be, and these filled dumplings are no exception. Instructions

1.In a large bowl, combine the shredded potatoes, mashed potatoes, beaten egg, grated onion, salt, and black pepper.
2.Stir in the flour and baking powder until the mixture forms a dough.
3.In a separate bowl, mix the cottage cheese, beaten egg, and salt.
4.Divide the dough into 4 pieces, and on a floured surface, roll out each piece into a thin circle.
5.Cut the circles into 2-inch squares and place a small amount of the cheese filling on each square.
6.Fold the dough over the filling and pinch the edges to seal.
7.Boil a large pot of salted water and carefully place the dumplings in it.
8.Cook for 5-7 minutes or until the dumplings float to the surface.
9.Serve hot topped with butter or sour cream.
