Ingredients

450 g stewing beef
6 tablespoons smooth peanut butter
2 medium onions ( chopped )
450 g ripe tomatoes ( chopped ) or 400 g tomatoes ( chopped )
3 fresh chili peppers
450 g carrots ( or a mixture of carrots , turnips and courgettes )
1 pinch mixed herbs
2 1/2 cm piece fresh ginger , grated or 1 teaspoon dry ginger powder
salt and black pepper
Ugandan Groundnut Stew is a traditional dish in Uganda, made with stewing beef, peanut butter, onions, tomatoes, and chili peppers. The dish is hearty and filling and is often served with rice or mashed potatoes. Instructions

1.Cut the beef into bite-sized pieces.
2.In a pot over medium-high heat, add the beef and cook until browned on all sides.
3.Add the onions, tomatoes, chili peppers, mixed herbs, and ginger to the pot and stir to combine.
4.Add enough water to cover the ingredients and bring to a boil. Reduce heat to low and cover the pot.
5.Simmer for 1 to 2 hours, or until the beef is tender.
6.Add the peanut butter to the pot and stir to combine. Simmer for an additional 10 minutes.
7.Season with salt and black pepper, to taste.
