Ingredients

4 double boneless skinless chicken breasts
kosher salt & freshly ground black pepper
8 slices deli ham ( thin slices )
16 slices gruyere cheese ( thin slices )
2 teaspoons fresh thyme leaves
1/4 cup flour
1 cup panko breadcrumbs
1 teaspoon olive oil
2 eggs
2 teaspoons water

Instructions

1.Preheat the oven to 400 degrees F (200 degrees C).
2.Butterfly the chicken breasts and season with salt and freshly ground black pepper
3.Lay out a slice of ham on top of each butterflied chicken breast
4.Put 2 slices of Gruyere cheese on top of the ham
5.Sprinkle fresh thyme leaves on top of the cheese
6.Close the chicken breasts and secure with toothpicks
7.Put flour, breadcrumbs, and a pinch of salt onto 3 separate plates
8.Roll each chicken breast in the flour, then dip in the egg mixture, and coat with breadcrumbs
9.Heat olive oil over medium-high heat and saute the chicken breasts until golden brown
10.Transfer to a baking dish and bake for about 20-25 minutes until the chicken is cooked through and the cheese is melted
