4 large red onions , thinly sliced
4 medium yellow onions , thinly sliced
1/4 teaspoon sugar
7 cups beef or 7 cups chicken stock
2 garlic cloves , minced
1 bay leaf
1/2 cup dry white wine
1/4 teaspoon dried thyme
1 teaspoon salt
black pepper ( to taste )
3/4 cup shredded swiss cheese or 3/4 cup gruyere cheese
12 slices baguette , each 1/4 thick
2 tablespoons finely chopped fresh flat-leaf Italian parsley

Instructions

1.Heat olive oil in a large pot over medium heat. Add the onions, sprinkle with sugar, and cook until caramelized, stirring occasionally for about 30 minutes.
2.Add minced garlic, bay leaf, dried thyme, salt, and black pepper. Cook for an additional 2-3 minutes, or until fragrant.
3.Deglaze the pan with white wine, scraping up all the brown bits from the bottom of the pot. Cook for 1-2 minutes, until the wine is reduced by half.
4.Add the beef or chicken stock and bring to a simmer. Cook until the soup is heated through and the flavors have had time to meld, approximately 20 minutes.
5.Preheat the oven to 375°F. Distribute the soup evenly among 4 oven-proof bowls. Top each bowl with 3 slices of baguette and sprinkle with shredded cheese.
6.Bake in preheated oven for 10-15 minutes, or until the cheese is melted, bubbly, and golden brown. Garnish with fresh Italian parsley before serving.
