Ingredients

2 fresh coconuts , grated
3 cups milk
1/2 cup cream
1 teaspoon cardamom powder
1 tablespoon milk
1/2 teaspoon saffron , heated , crushed and dissolved in the milk
400 g sugar
3 drops green food coloring

Instructions

1.In a heavy bottom pan, combine milk and grated coconut. Cook on medium heat till the milk has been absorbed and the mixture has thickened.
2.Add sugar and stir continuously till the mixture thickens and starts leaving the sides of the pan.
3.Add cream, cardamom powder, and yellow food coloring, and stir well. Cook for 5 minutes.
4.Spread the mixture evenly on a greased plate or tray and let it cool.
5.In another pan, heat 1 tablespoons milk.
6.Add saffron to the milk and mix gently. Pour the saffron mixture over the coconut mixture.
7.Take the green food coloring and put 3 drops, mix the green food coloring well
8.Cut the barfi into square or diamond shapes and serve.
