100 g extra dark bittersweet chocolate
100 g milk chocolate
1 egg
1/4 liter cream
2 teaspoons cognac or 2 teaspoons Amaretto

Instructions

1.Break both types of chocolate into small pieces and place them in separate heat-proof bowls.
2.Heat the cream in a saucepan until it comes to a boil, then remove it from the heat and divide it into two equal parts.
3.Pour one half of the cream into each bowl of chocolate and stir until the chocolate has completely melted and the mixture is smooth.
4.Beat the egg in a mixing bowl until light and fluffy, then gradually fold in each bowl of chocolate mixture separately.
5.After adding the first bowl of chocolate mixture, add one teaspoon of cognac or Amaretto and stir until combined. Then, add the second bowl of chocolate mixture and stir until combined.
6.Pour the mixture into a terrine mold and smooth the top with a spatula.
7.Cover the mold with cling film and refrigerate for at least 4 hours or preferably overnight, until the mixture has set.
8.Before serving, run a knife along the edge of the mold to loosen the terrine, then carefully invert it onto a serving plate. Decorate with raspberries and serve chilled.
