Ingredients

4 small shallots , quartered
2 teaspoons pure chile powder
1 teaspoon anchovy paste
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground fennel
2 garlic cloves

1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon ground cloves
1/4 teaspoon ground cinnamon
3 cups vegetable oil , for frying
4 lbs chicken , cut into 12 pieces ( each breast cut into thirds )

Instructions

2.In a saucepan, heat the oil, and fry the chicken pieces over medium-high heat for about 10 minutes till they turn golden brown.
3.Remove the chicken from the pan, and let it cool in a baking sheet lined with paper towels. Reserve the oil for the second round of frying.
4.Add the fried chicken back to the hot oil and fry them for another 3-4 minutes till they turn golden brown.
5.Remove the chicken from the pan and place them again in the baking sheet.
6.Serve hot with some steamed rice or veggies!
