Ingredients

8 chicken thighs , skin and bone left intact
2 tablespoons peanut oil or 2 tablespoons vegetable oil
1 medium onion , chopped
kosher salt
fresh ground black pepper
4 -5 garlic cloves , smashed
2 inches piece ginger , peeled and chopped or 2 teaspoons ground ginger
1 tablespoon ground coriander
1 teaspoon ground cardamom
1 tablespoon paprika
1 teaspoon ground cumin
chopped fresh chili peppers ( optional ) or crushed red pepper flakes , to taste ( optional )
3 cups plain yogurt

Instructions

8.Preheat oven to 425°F (220°C).
9.Grease a roasting pan with oil and arrange the chicken thighs spaced apart.
10.Roast the chicken in the preheated oven for 25 minutes, flipping the pieces once halfway through cooking.
