1/4 teaspoon Sichuan peppercorns
1 1/2 tablespoons chile bean sauce ( toban djan )
2 teaspoons sweet bean paste
1/4 teaspoon white sugar
3 tablespoons vegetable oil , divided
1 green bell pepper , seeded and chopped into 3/4-inch pieces
1/4 teaspoon salt

Instructions

1.In a large pot of boiling water, add pork belly, ginger, and Sichuan peppercorns.
2.Reduce heat to low and simmer for 30 minutes or until the pork is cooked through.
3.Remove the pork from the pot, let it cool, and then slice into thin pieces.
4.In a separate bowl, mix together chile bean sauce, sweet bean paste, and white sugar.
5.Heat 1 tablespoon of vegetable oil in a wok over high heat.
6.When hot, add the sliced pork and stir-fry for 1-2 minutes.
7.Add the chopped bell pepper and stir-fry for another 1-2 minutes.
8.Remove the pork and bell pepper from the wok and set it aside.
9.Heat another 2 tablespoons of vegetable oil in the same wok and add the chile bean sauce mixture.
10.Cook the sauce for 1-2 minutes or until fragrant.
11.Add the pork and bell pepper back into the wok and stir-fry for another 1-2 minutes.
12.Serve hot with white rice.
