Ingredients

6 tablespoons olive oil
1 onion , chopped fine
1 red bell pepper , chopped fine
6 garlic cloves , minced
1/4 cup fresh basil , chopped
2 tablespoons thin sliced basil leaves

2 cups canned crushed tomatoes , in a thick puree ( from one 28-ounce can )
1 1/4 lbs vine ripened tomatoes , cut small dice ( about 4 )
1 cup low sodium chicken broth
2 1/4 teaspoons salt
1 pinch sugar
1 3/4 lbs country-style bread , crust removed , cut into 1-inch cubes ( about 7 cups )
1/4 teaspoon black pepper
2 lbs mussels , scrubbed and debearded
1/4 cup dry white wine

Instructions

1.In a soup pot, heat 3 tablespoons of olive oil and sauté onion, garlic and red pepper for 4-5 minutes.

3.Make sure to stir the soup and let it simmer for 15-20 minutes.
4.Add the cubed bread pieces to the soup and return to a simmer for another 30 minutes, stirring constantly.
5.Add in black pepper and continue to simmer until soup thickens and bread dissolves around 10-15 minutes longer cover the soup with a lid at this point.
6.Meanwhile, steam the mussels and wine in a large pot, covered, over medium-high heat for 8-10 minutes. Shake the pot a few times, until the mussels are opened.
7.Discard unopened mussels and add the mussel broth to the soup, stir well.
8.Add the steamed mussels to the soup once ready and serve it hot with thin slices of basil, salt, and pepper.
