Ingredients

140 g rice flour
50 g tapioca flour
30 g rice starch
12 g baking powder
50 g raw honey
3 egg yolks
50 g sweet wine ( Zibibbo )
5 figs ( dried )
1 dried apricot ( dried )
1 tablespoon honey ( for dusting )
Cantucci are almond-flavored biscotti from Tuscany, Italy. In this Tuscan-style recipe, we have substituted almond with figs and apricots, making it a gluten-free delight. This dish is perfect for anybody who has a sweet tooth but wants to avoid using sugar.

Instructions

1.Preheat the oven to 170 C and line a baking tray with parchment paper.
2.In a mixing bowl, combine rice flour, tapioca flour, rice starch, and baking powder.
3.To this mixture, add figs, dried apricots, egg yolks, sweet wine (Zibibbo), and raw honey.
4.Mix them until the dough is smooth.
5.Spread the dough into a rectangular shape in the baking tray.
6.Bake the dough in the oven for 25-30 minutes or until the golden color appears on the surface.
7.Remove the tray from the oven and slice the baked dough into neat rectangular pieces.
8.Put each rectangle back on the baking tray, brush each with honey, and bake again for 3-4 mins until the edges are golden brown.
9.Cool them on a wire rack, serve and enjoy.
