Ingredients

1 lb small red potato
6 garlic cloves , peeled & finely minced
1 teaspoon olive oil
1/4 cup of fresh mint , minced & stemmed
1/4 teaspoon kosher salt ( or to taste ) or 1/4 teaspoon sea salt ( or to taste )
pepper , to taste

Instructions

1.Preheat oven to 400°F.
2.Rinse and dry potatoes. Cut large potatoes to desired size.
3.In a medium bowl, mix together garlic, olive oil, salt and pepper.
4.Add potatoes and toss to fully coat potatoes with mixture.
5.Place the coated potatoes in a roasting pan in a single layer, cut side down.
6.Roast for 25-30 minutes, or until potatoes are tender and golden brown, tossing halfway through cooking.
7.Once cooked, remove from oven and toss with fresh mint.
