Ingredients

1 tablespoon olive oil
1 1/2 kg lamb shoulder , bone removed and tied with string
3 large garlic cloves
12 small rosemary sprigs
115 g lean rindless bacon , chopped
1 onion , chopped
3 carrots , finely diced
3 celery ribs , finely diced
2/3 cup red wine
1 1/4 cups vegetable stock
14 ounces chopped tomatoes
3 sprigs fresh thyme
2 bay leaves
14 ounces cannellini beans , drained and rinsed

Instructions

1.Heat olive oil in a skillet over medium-high heat. Add the lamb shoulder, and brown each side for about 5 minutes.
2.Place the garlic cloves and rosemary sprigs in the bottom of a crock pot. Add the lamb shoulder to the pot.
3.Add bacon, onion, carrots, and celery to the skillet, and sauté for about 5 minutes. Pour the vegetables and any pan drippings over the lamb in the crock pot.
4.Add red wine, vegetable stock, chopped tomatoes, thyme, and bay leaves to the crock pot. Sprinkle cannellini beans on top.
5.Cover and cook on low for 8-10 hours, until lamb is tender and falling off the bone. Serve with potatoes and crusty bread.
