Ingredients

450 g basmati rice long grain rice
3 tablespoons vegetable oil
3 cloves
1 bay leaf
4 cardamom pods
2 1/2 cm piece cinnamon bark
2 garlic cloves , peeled and finely chopped
1/4 teaspoon ground turmeric
1 teaspoon salt
22 ounces water
chopped chives ( to garnish )

Instructions

1.Rinse the rice in several changes of cold water and drain well.
2.Heat the oil in a heavy, wide pot over medium-high heat. Add the cloves, bay leaf, cardamom pods, and cinnamon bark. Stir for a few seconds until the spices are fragrant. Add the garlic and stir.
3.Add the rice and stir gently until all the grains are coated with oil. Add the turmeric, salt, and water and stir. Bring to a boil, then cover the pot tightly with a lid.
4.Decrease the heat to very low and cook for 20 minutes.
5.Remove from the heat and let the rice stand, covered, for 10 minutes. Remove the whole spices and fluff the rice with a fork. Garnish with chopped chives and serve hot.
