Ingredients

2 - 2 1/2 2 -2 1/2 lbs lamb ribs or 2 -2 1/2 lbs lamb shoulder
3 quarts water
1 large onion
1 medium carrot
1 tablespoon salt

3 egg yolks
2 tablespoons lemon juice
1/4 cup butter
2 teaspoons paprika
1 dash cayenne

Instructions

3.Remove the lamb from the pot and set aside to cool slightly. Remove and discard the bones.

5.In a small bowl, whisk the egg yolks and lemon juice. Gradually add a few tablespoons of the hot soup broth to the egg mixture, whisking constantly, until the egg mixture is warmed through.
6.Pour the egg mixture into the soup pot, stirring constantly. Simmer for 5-7 minutes, stirring occasionally.
7.Meanwhile, in a small saucepan, melt the butter over low heat. Stir in the paprika and cayenne.
8.Stir the paprika mixture into the soup pot. Simmer for an additional 5-10 minutes, stirring occasionally, until the soup thickens.
9.Serve hot and enjoy!
