1 large eggplant ( about 1 pound )
2 teaspoons salt
1/2 cup extra virgin olive oil
2 medium onions , roughly chopped
3 tablespoons pine nuts
1 large tomatoes , peeled cored and roughly chopped
1/4 cup raisins
1 teaspoon sugar
1 teaspoon cinnamon
1 teaspoon cumin
fresh ground black pepper
1/2 cup fresh dill , roughly chopped
2 tablespoons fresh parsley , roughly chopped
thick yogurt , for serving
lemon wedge , for serving

Instructions

1.Preheat the oven to 350°F.
2.Slice the eggplant in half lengthwise and score the flesh in a crosshatch pattern.

4.In the meantime, in a large pan, heat the olive oil over medium heat.

8.Wipe the eggplant halves with paper towels to remove the excess salt water. Place the eggplant halves cut side down in the pan with the tomato mixture.
9.Cover with foil and bake for 45 minutes.
10.Remove the foil and continue baking for another 15 minutes or until the eggplant is soft and the skin is browned.
