Ingredients

1/4 cup butter
2 onions , finely chopped
1 teaspoon paprika
1 cup red lentils
1/2 cup fine bulgur
2 tablespoons tomato paste
8 cups vegetable stock
1/8 teaspoon cayenne pepper
1 tablespoon dried mint leaves
4 slices lemon
1/2 teaspoon chopped fresh mint

Instructions

1.Rinse red lentils and drain them.
2.Chop onions finely.

5.Add lentils, bulgur and vegetable stock. Bring the mixture to a boil and stir occasionally.
6.Reduce heat slightly and add in cayenne pepper and dried mint. Cover the pot with lid and continue simmering for 15-20 minutes.
7.Once lentils and bulgur are cooked, turn off the heat and let the soup rest for 5 minutes before serving. Garnish with chopped fresh mint and slices of lemon.
