Ingredients

2 sachets dried yeast ( 1 tablespoon )
1 pinch caster sugar
375 ml warm water
480 g strong bread flour
1 teaspoon salt
60 ml extra-virgin olive oil
1 egg
2 tablespoons milk
nigella seeds or sesame seeds

Instructions

1.In a small bowl, combine the dried yeast, caster sugar, and warm water. Set aside for 5 minutes to activate the yeast.
2.In a large mixing bowl, whisk together the bread flour and salt. Create a well in the center of the bowl and pour in the yeast mixture, extra-virgin olive oil, and egg. Mix everything together until a dough forms.
3.Knead the dough on a floured surface for 10 minutes until it's smooth and elastic. Return the dough to the mixing bowl, dust with flour, cover, and let it rest in a warm place for 1 hour, or until doubled in size.
4.Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
5.Divide the dough in half. Roll each portion into an elongated oval shape, approximately 1 cm thick. Brush the tops with milk and sprinkle with nigella seeds or sesame seeds.
6.Bake for 15-20 minutes until golden brown and crispy on the outside. Transfer to a wire rack to cool.
