Ingredients

2 tablespoons butter plus 1 teaspoon butter
1 garlic clove , minced
salt , to taste
pepper , to taste ( I added white pepper with the garlic and black pepper for garnish )
3 tablespoons flour
1 large white onion , cut into 1/4 inch slices , rings separated
1 cup whole milk
1/2 cup- 1 cup white wine ( read Note )
1 cup vegetable broth ( can substitute chicken broth )
ground cinnamon
fresh parsley
Turkish Onion Soup-Sogan Corbasi is a classic comfort food, enjoyed throughout Turkey. It is commonly served as an appetizer or light dinner, especially in the colder months. The soup's smooth texture and full flavor come from an unusual combination of ingredients- onion, wine, vegetable broth, and cinnamon. Instructions

1.Melt 2 tablespoons of butter in a large pot over medium heat.
2.Add minced garlic, salt, and pepper to taste. Cook for 1-2 minutes.
3.Add flour and whisk continuously until it forms a paste. Cook for another minute.
4.Add sliced onions and stir everything together for a minute until the onions soften.
5.Pour in 1/2 cup to 1 cup of white wine and bring it to a boil. Simmer it for 5-7 mins.
6.Add vegetable broth, stir, and let it simmer for 10-15 mins or until the onions are cooked.
7.Remove it from heat, and let it cool for few mins. Add fresh parsley, ground cinnamon, and blend it smooth with a immersion blender.
8.Pour it back into the pot, add whole milk and remaining butter. Bring to a boil, whisking occasionally.
9.Serve hot and garnish with fresh parsley and black pepper if desired.
