1 cup boiling water
2 teaspoons whole coriander seeds
2 teaspoons whole cumin seeds
3/4 cup nonfat plain yogurt , preferably Greek ( see Ingredient Note )
1/4 cup finely chopped scallion top
1/4 cup chopped flat leaf parsley , divided
2 tablespoons chopped of fresh mint
1 tablespoon chopped fresh oregano
1 teaspoon freshly grated lemon zest
1 tablespoon lemon juice
1 teaspoon sugar
1 1/2 teaspoons fresh ground pepper , divided
2 cups diced tomatoes
1/2 cup finely chopped red onion
2 tablespoons extra-virgin olive oil
12 ounces ground lamb
4 ounces 93 % -lean ground turkey
1 cup finely chopped yellow onion
1 large egg
2 tablespoons chopped garlic
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon ground allspice
1 pinch ground cinnamon
6 whole wheat pita bread , warmed

Instructions

1.In a small bowl, combine bulgur and boiling water. Let it stand for 25 minutes.
2.In a dry small skillet, toast cumin and coriander seeds for 2-3 minutes or till fragrant.
3.In a medium bowl, stir together yogurt, scallion, 2 tbsp parsley, mint, oregano, lemon zest, lemon juice, sugar, 1/2 tsp freshly ground pepper, and 1/8 tsp salt.
4.In a large bowl, mix together tomatoes, onion, oil, remaining 1/4 tsp salt, and remaining 1 tsp freshly ground pepper. Set aside.
5.In another large bowl, combine lamb, turkey, onion, egg, garlic, cayenne pepper, 1/2 tsp salt, allspice, cinnamon, remaining 2 tbsp parsley, toasted cumin, and coriander seeds, and drained bulgur.
6.Form the mixture into 6 patties.
7.Preheat grill to medium-high heat.
8.Grill patties for 4 to 6 minutes per side.
9.To serve, cut each pita bread into half and divide patties and tomato mixture equally among pitas, topped with yogurt sauce.
