Ingredients

3/4 cup green lentil , soak in water overnight ( do n't boil or it will lose vitamins )
1 medium onion , chopped
2 tablespoons butter
2 tablespoons flour
2 -3 cups hot water
1 teaspoon cumin
1 teaspoon salt
1 garlic clove , smashed with salt
4 -5 tablespoons wine vinegar , with raspberry juice or 4 -5 tablespoons another type vinegar

Instructions

1.Rinse the soaked lentils in a colander and drain well.
2.In a large pot, sauté the chopped onion with butter until soft.
3.Add the flour and cumin, mix well and cook for 1 minute.
4.Pour in the hot water, smashed garlic, and salt. Add the lentils and mix well.
5.Bring the soup to a boil, then lower the heat and simmer until the lentils are soft and tender. Stir occasionally.
6.Once the lentils are cooked, blend the soup with an immersion blender or transfer it to a blender and blend until smooth.
7.Mix in the vinegar and raspberry juice or another type of vinegar.
