Ingredients

1 large eggplant
1/2 cup lentils
water
2/3 cup extra virgin olive oil
1 onion , chopped
4 garlic cloves , chopped
2 tomatoes , chopped
2 anaheim chilies , seeded and chopped
2 tablespoons mint leaves
1 tablespoon tomato paste
1 pinch crushed red pepper flakes
1/4 cup pomegranate molasses
1/2 cup kosher salt

Instructions

1.Peel the eggplant skin partially, cut them into bite-sized pieces. Soak them in salt water for 40 minutes. Rinse with cold water and pat dry with paper towels
2.Add the lentils and 2 cups of water in a pot over high heat, bring to a boil, and then reduce the heat to low, simmer for 10 minutes until the lentils soften
3.In a separate pot, heat the olive oil over medium heat, then saute the onion and garlic for 2 minutes. Add the chilies and cook for an additional 3 minutes. Stir in chopped tomatoes, mint leaves, tomato paste, and crushed red pepper flakes.
4.Add the eggplant and 1/2 cup of water, simmer for 10 minutes until the eggplant is softened. Add the cooked lentils, pomegranate molasses, and kosher salt, then stir to combine. Let the stew simmer for another 10 minutes.
