2 eggplants
600 g beef
6 large garlic cloves , chopped
1 large onion
2 tomatoes , sliced
2 tablespoons olive oil
2 tablespoons tomato paste , for spaghetti sauce

Instructions

1.Preheat the oven to 180°C.
2.Cut the eggplants in half lengthwise and scoop out the flesh with a spoon.

5.Add the chopped garlic and onion, stirring occasionally until onions are fragrant.
6.Add the tomato paste, sliced tomatoes, and eggplant flesh. Cook for 5 minutes.
7.In a casserole dish or clay pot, layer the eggplant shells and the beef mixture. Cover with a lid or aluminum foil.
8.Bake in the oven for 45-60 minutes or until beef is tender.
