Ingredients

1 bunch arugula
2 tablespoons pine nuts
1/3 cup shelled walnuts
1/4 cup fresh dill
1/2 cup fresh parsley
2 eggs
2 tablespoons grated mild cheddar cheese ( taze kasar )
2 tablespoons flour
1 pinch salt
1 tablespoon olive oil
2 garlic cloves
1 lemon , juice of
4 tablespoons fresh lemon
1 pinch salt
1 pinch black pepper
This Turkish Aegean Style Arugula & Walnut Salad is a delicious and healthy salad that's perfect for a light lunch or dinner. Instructions

1.Rinse the arugula leaves.
2.Toast the pine nuts on a dry frying pan for 3 minutes until golden brown. Set them aside.
3.Chop the walnuts, sprinkle flour on them and add salt. In a small pan, fry the walnuts with olive oil for 5 minutes until they are browned. Set them aside.
4.Whisk together the grated cheddar cheese, eggs, garlic cloves, lemon juice, fresh lemon, salt, and black pepper to make the dressing.
5.Combine the arugula, pine nuts, walnuts, fresh dill and parsley in a large salad bowl.
6.Pour the dressing over the salad and toss it well.
7.Serve the salad chilled.
