Ingredients

1/2 - 3/4 lb ground turkey
1/2 teaspoon garlic , minced
1 teaspoon fresh ginger , minced
1 tablespoon chopped spring onion , white part only ( or scallion )
1/2 teaspoon honey
1/2 tablespoon soy sauce
2 tablespoons well-beaten eggs
1 teaspoon cornstarch
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup mirin ( or regular sherry & a tsp . of sugar ) or 1/4 cup sweet sherry ( or regular sherry & a tsp . of sugar )
1/4 cup soy sauce
1 tablespoon maple syrup
1 tablespoon brown sugar
2 teaspoons fresh ginger , minced
2 tablespoons lemon juice
1 teaspoon cornstarch
1 tablespoon cold water
6 spring onions , trimmed & cut to about 8-inches long
1/4 cup mayonnaise

Instructions

1.Preheat grill or grill pan over medium-high heat.
2.In a large bowl, mix together ground turkey, garlic, ginger, chopped spring onion, honey, soy sauce, beaten eggs, cornstarch, salt, and pepper.
3.Divide the meat mixture into 6 equal parts and shape them into patties.
4.Mix together mirin, soy sauce, maple syrup, brown sugar, minced ginger, and lemon juice in a saucepan and whisk until brown sugar is dissolved.
5.Bring to a boil and reduce heat. Let simmer for 2-3 minutes, then remove from heat.
6.Place the patties on the hot grill and cook until brown, about 2-3 minutes on each side.
7.Baste the patties with the glaze and cook for another 1-2 minutes on each side.
8.Remove the patties from the grill and let them rest for a few minutes.
9.Place the spring onions on the grill and cook for 2-3 minutes on each side, until lightly charred.
10.Spread mayonnaise on the bottom of each bun and place a patty on top. Add the grilled spring onions and drizzle with more glaze. Top with the other half of the bun.
