Ingredients

8 -12 turkey breast steaks
1 carrot , diced small
1 onion , diced
1 celery rib
1 bay leaf
1 sprig thyme
1 cup white wine
1/2 cup olive oil
1 teaspoon pickled capers
1/2 teaspoon fennel seed
1/2 teaspoon black peppercorns
1/4 teaspoon salt
1 jar mayonnaise
1 can tuna in brine , drained
100 -200 ml strained turkey broth ( approx , see method )
4 anchovy fillets
1 teaspoon pickled capers
1 squeeze lemon juice
1 tablespoon pickled capers
12 black olives , pitted and chopped
1 sprig parsley , chopped

Instructions

1.Preheat a grill pan over medium-high heat.
2.Rub turkey breast steaks with salt, black pepper and fennel seeds.
3.Grill turkey steaks for 4-5 minutes on each side until golden brown.
4.In a pot, add diced onion, celery, carrot, bay leaf, thyme and white wine. Bring it to boil.
5.Lower heat to medium-low and simmer for 20 minutes. Strain to separate and reserve the broth.
6.For the sauce, blend mayonnaise, tuna, strained turkey broth, anchovy fillets, pickled capers, and lemon juice until smooth.
7.On a serving platter, arrange the grilled turkey steaks.
8.Pour tuna sauce over and sprinkle with chopped black olives, parsley, and capers.
9.Cover with cling wrap and refrigerate for 2 hours.
10.Serve chilled.
