Ingredients

4 ounces sweetcorn ( a little less than 1 cup or 100g , fresh or frozen )
3 slices day-old white bread , crusts removed
1 lb ground turkey breast or 1 lb ground turkey ( 500g )
1 egg
4 scallions or 4 spring onions , finely chopped
2 tablespoons finely chopped parsley
2 1/2 teaspoons ground cumin
1 1/2 teaspoons black pepper
1 garlic clove , crushed
sunflower oil , for frying
4 red bell peppers , quartered with the white parts and seeds removed
3 tablespoons olive oil
1 teaspoon salt
1 ounce cilantro , leaves and stalks ( about 12 sprigs or 25g )
1 garlic clove , peeled
1 small mild chile , de-seeded
2 tablespoons sweet chili sauce
2 tablespoons cider vinegar or 2 tablespoons white wine vinegar

Instructions

1.Preheat oven to 400F ( 200C )
2.In a food processor , pulse the sweet corn and bread until it turns into fine crumbs.
3.In a large mixing bowl, combine the breadcrumbs, ground turkey breast, egg, scallions, parsley, cumin, black pepper, and garlic.
4.Mix well until all ingredients are combined.
5.Form meatballs into about small 2-inch: balls and set aside on a plate.
6.In a large frying pan over medium-high heat, add sunflower oil ( about 1/2 inch deep ).
7.Add meatballs to the pan and fry them until golden brown on all sides for about 5-7 minutes.
8.Arrange bell peppers in a single layer on a baking tray and drizzle with olive oil and salt.
9.Roast them in the oven for about 20 minutes until they are softened and slightly charred.
10.In a food processor, add the roasted bell peppers, cilantro, garlic, chile, sweet chili sauce, and vinegar.
11.Blend until smooth.
12.Serve meatballs with the roasted pepper sauce on the side.
