Ingredients

1 lb ground turkey
1 tablespoon cooking oil
2 cups salsa ( hot or medium )
1 bunch fresh spinach , roughly chopped or package frozen spinach , thawed
2 teaspoons ground cumin
1/2 teaspoon cayenne pepper ( optional )
1 teaspoon dried oregano
1 teaspoon salt
8 ounces fat free cream cheese , at room temperature
8 flour tortillas
1 can chopped tomatoes
1/2 cup grated cheddar cheese or 1/2 cup American cheese
4 fresh mushrooms , sliced ( I like crimini , but buttons are fine ) ( optional )

Instructions

1.Preheat the oven to 375°F..
2.In a large skillet, heat the cooking oil over medium-high heat.
3.Add the ground turkey and cook, stirring frequently, until browned and cooked through, about 8-10 minutes.
4.Add the cumin, oregano, cayenne pepper (if using), and salt to the skillet and stir to combine.
5.Add the chopped spinach to the skillet and cook for 2-3 minutes, or until wilted.
6.Add the cream cheese to the skillet and stir until melted and well combined with the meat mixture.
7.Place a heaping spoonful of the meat mixture down the center of each tortilla.
8.Roll up the tortillas and place them seam side down in a greased baking dish.
9.In a separate bowl, mix together the salsa and chopped tomatoes.
10.Pour the salsa mixture over the top of the enchiladas.
11.Sprinkle the grated cheese on top of the enchiladas, and then add the sliced mushrooms (if using) on top of the cheese layer.
12.Cover the baking dish with aluminum foil and bake for 20-25 minutes, or until the enchiladas are heated through and the cheese is melted.
13.Remove the foil and bake for an additional 5-10 minutes, or until the cheese is bubbly and golden brown.
