Ingredients

4 teaspoons crumbled feta cheese , divided
1 teaspoon kosher salt , divided
4 small pita pockets
1 lemon , quartered
lettuce , tomatoe , mayonnaise , sour cream ( optional )

Instructions

1.In a large bowl, combine ground turkey, chopped mint or cilantro, chopped rosemary, chopped parsley, minced garlic, dried oregano, Dijon mustard, fresh ground black pepper, ground red pepper (optional), two teaspoons crumbled feta cheese, and half a teaspoon of kosher salt. Mix well.
2.Form the mixture into four equal patties.
3.Preheat the grill to medium-high heat. Place the patties on the grill and cook for six to seven minutes per side, or until fully cooked.
4.Cut each pita pocket in half crosswise and warm briefly on the grill.
5.Fill each pita half with a cooked patty, a teaspoon of crumbled feta cheese, and your choice of lettuce, tomato, mayonnaise, or sour cream. Squeeze fresh lemon juice over the top and serve immediately.
