Ingredients

3 turkey breast halves
2 turkey thighs
salt & freshly ground black pepper
1/3 cup all-purpose flour , for dredging
1/2 cup vegetable oil
1 small onion , finely diced
1 carrot , finely diced
1 stalk celery , finely diced
1 tablespoon tomato paste
1 cup dry white wine
4 cups reduced-sodium chicken broth
1 sprig fresh rosemary
2 sprigs fresh thyme
2 bay leaves
2 whole garlic cloves
1/4 cup chopped fresh flat-leaf parsley
1 lemon , zest of grated
2 garlic cloves , minced
1 teaspoon minced rosemary
1 pinch salt
1 pinch fresh ground black pepper
Osso bucco is an Italian dish that traditionally uses beef or veal shanks, but this variation uses turkey to provide a lighter and healthier take on the classic. The turkey meat is slowly braised in a flavorful broth with aromatic vegetables and wine to create tender and succulent meat that is perfect for chilly evenings or special occasions. Instructions

1.Preheat the oven to 350 degrees F.
2.Sprinkle the turkey pieces with salt and pepper. Dredge the turkey in flour to coat lightly.
3.In a large heavy ovenproof pot, heat the oil over medium-high heat.
4.Add the turkey to the pot and cook until brown on both sides, about 7 minutes.
5.Using a slotted spoon, transfer the turkey to a plate and set aside.
6.Add onion, carrot, and celery to the same pot and saute until the onion is translucent, about 5 minutes.
7.Add the tomato paste and stir to combine.
8.Add the white wine and simmer until reduced by half, about 3 minutes.
9.Add the chicken broth, rosemary, thyme, bay leaves, and garlic to the pot.
10.Return the turkey to the pot and spoon some of the sauce over the turkey.
11.Bring the mixture to a simmer.
12.Cover the pot and place it in the oven.
13.Bake until the turkey is tender, about 2 hours.
14.For the gremolata, combine the parsley, lemon zest, garlic, rosemary, salt, and pepper in a small bowl. Mix well.
15.Remove the bay leaves and discard.
16.Serve the turkey osso bucco hot with the gremolata sprinkled on top.
