Ingredients

2 teaspoons olive oil
1 lb turkey , ground
1 onion , chopped
2 garlic cloves , minced
1/2 teaspoon salt
1 teaspoon dried oregano
1/4 teaspoon ground cumin
2 cans enchilada sauce
1 can mild green chilies
1 teaspoon red wine vinegar
1/4 cup fresh coriander , chopped
8 corn tortillas , halved
1 cup low-fat cheddar cheese , grated
This Turkey Enchilada Casserole is a satisfying and delicious way to enjoy enchiladas without all the fat and calories of traditional recipes. Instructions

1.Preheat oven to 375°F.
2.In a large skillet, heat the olive oil over medium-high heat.
3.Add the turkey and onion and cook until browned, stirring occasionally.
4.Add the garlic, salt, oregano and cumin and cook for an additional 2 minutes.
5.Add the enchilada sauce, green chilies, and red wine vinegar and stir to combine.
6.Bring the mixture to a simmer and cook for 5 minutes.
7.Remove from heat and stir in the chopped coriander.
8.In a 9x13 inch casserole dish, spread a thin layer of the turkey mixture on the bottom.
9.Arrange the halved tortillas on top of the turkey mixture, overlapping slightly.
10.Spoon half of the remaining turkey mixture over the tortillas.
11.Sprinkle half of the grated cheese over the turkey mixture.
12.Repeat with another layer of tortillas, turkey mixture and cheese.
13.Bake for 20-25 minutes until cheese is melted and bubbly.
