2 teaspoons ground cumin
1 teaspoon oregano
1 medium courgette
1 red pepper
1 green pepper
400 g chopped tomatoes
240 g cooked black beans
fresh coriander leaves

Instructions

1.In a non-stick frying pan, cook the ground turkey over medium-high heat, breaking it up with a wooden spoon, until it is browned and cooked through.
2.Add the onion and garlic to the pan and cook for 2-3 minutes until the onion is softened.
3.Add the chili powder, cumin, and oregano to the pan, stirring to combine.
4.Add the courgette, red pepper, and green pepper to the pan, cooking for a few minutes until the vegetables are tender.
5.Add the chopped tomatoes and black beans, along with half a cup of water.
6.Bring the mixture to a simmer and cook for 10-15 minutes until the chili is thick and heated through.
7.Serve the chili hot, garnished with fresh coriander leaves if desired.
