1 can green chili peppers , drained and diced
1 teaspoon chili powder
3 scallions , sliced
1 cup reduced-fat monterey jack cheese , shredded
8 burrito-size flour tortillas
1 cup salsa ( see note in description )
1/2 cup nonfat sour cream ( I used light sour cream )
Turkey and cheese chimichangas are a delicious and healthy way to enjoy traditional Mexican flavors. Instructions

1.Preheat oven to 400°F.
2.Coat a large skillet with cooking spray and heat over medium-high heat. Add ground turkey and cook, stirring, until browned and cooked through.
3.Stir in refried beans, 1 3/4 cups of salsa, diced chili peppers, chili powder, and scallions. Cook, stirring occasionally, for 5 minutes or until heated through.
4.Spread out flour tortillas on a work surface. Place 1/4 cup turkey mixture and 2 tablespoons of cheese down the center of each tortilla.
5.Roll up burrito-style and place seam-side down on a baking sheet coated with cooking spray.
6.Brush the chimichangas with additional cooking spray. Bake for 20-25 minutes, or until golden brown and crispy.
7.Serve hot with remaining salsa and nonfat sour cream.
