18 dried corn husks
1 cup butter flavor shortening or 1 cup margarine
2 cups corn masa harina mix
4 tablespoons creole seasoning
3 tablespoons crushed garlic
1 whole onion
2 tablespoons gumbo file powder
2 cups diced fish
2 cups shrimp
2 cups hot link sausage
3 boneless chicken breasts
1/2 cup olive oil or 1/2 cup canola oil
3 cups water , for mixing the masa harina flour ( or more )

Instructions

1.Soak corn husks in hot water, set aside.
2.In a large mixing bowl, combine the butter flavor shortening or margarine with corn masa harina mix, creole seasoning, gumbo file powder and crushed garlic. Mix well.
3.Gradually add water, continue mixing. Set aside.
4.In a skillet, heat olive or canola oil over medium heat. Saute diced onion until tender.
5.Add in hot link sausage and boneless chicken breasts, cook until brown.
6.Mix in diced fish and shrimp, continue cooking until shrimp is pink.
7.Mix the sauteed meat and seafood with the masa dough until well combined.
8.Rinse corn husks and pat dry. Spread a thin layer of masa dough on each husk, about 1/4 inch thick.
9.Roll each husk into a tamale and tie the bottoms with a strip of corn husk.
10.Steam tamale in a steamer basket for 1 hour. Serve warm.
